These simple yet tasty stuffed cucumbers are loaded with tuna mayo and packed with flavor from fresh cilantro, zesty lime and sweet red pepper.

These are an ideal snack in between meals or you could enjoy two as a simple lunch serving.

Ingredients

  • ½ large – 8 1/4" long cucumber
  • 2 ounce canned tuna
  • 1 tablespoon mayonnaise
  • ¼ small red pepper
  • 1 tablespoon, chopped cilantro
  • ¼ Zest of 1 small lime lime zest
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Slice the cucumber into 4 even segments. Taking a sharp knife, score around the center of the cucumber and scoop out the seeds, being careful not to cut all the way through the cucumber.
  2. Finely dice the red pepper. Add the tuna, mayonnaise, red pepper, lime zest, cilantro, salt and pepper to a mixing bowl. Stir well to combine.
  3. To serve, divide the tuna mayo evenly between the hollow cucumber cups.
