  • 1 cup heavy cream
  • 2 package stevia leaf noncaloric sweetener (green packet)
  • 4 ounce cream cheese

Instructions

  1. In a stand mixer, whip together the heavy cream and first amount of stevia until you have a stiff whipped cream – about 2-3 minutes. Keep an eye on this first step to avoid turning your whipped cream into sweet butter! When done, set the whipped cream aside in a new bowl.
  2. Quickly wipe your mixing bowl clean and return it to your stand mixer with a paddle attachment. Mix together the cream cheese, second amount of stevia, and vanilla extract on a high speed. Continue mixing the cream cheese on high until it is totally smooth, free of lumps, and light and airy – almost as light as the whipped cream. This can take up to 5-10 minutes, while occasionally scraping the cream cheese back together off the paddle and sides of the bowl.
  3. Once the cream cheese is light and fluffy, mix HALF the whipped cream into the cream cheese on a very low speed. Then, use a spatula to fold the remaining whipped cream by hand into the cheesecake fluff. Enjoy immediately!
