These tasty celery stalks are loaded with creamy lemon whipped ricotta cheese and topped with tart dried cranberries.
These are a great snacking option between meals.
Ingredients
- 4 medium – stalk – 7 1/2" to 8" long celery, raw
- 3 tablespoon ricotta cheese
- 1 tablespoon lemon juice
- 1 tablespoon craisins dried cranberries reduced sugar by ocean spray
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the ricotta, lemon juice, salt and pepper to a food processor and blend until smooth and creamy.
- Slice the celery stalks in half.
- Divide the ricotta mixture evenly between the center of the celery stalks.
- Finely chop the cranberries and scatter over the tops of the ricotta to serve.
