These tasty celery stalks are loaded with creamy lemon whipped ricotta cheese and topped with tart dried cranberries.

These are a great snacking option between meals.

Ingredients

  • 4 medium – stalk – 7 1/2" to 8" long celery, raw
  • 3 tablespoon ricotta cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon craisins dried cranberries reduced sugar by ocean spray
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the ricotta, lemon juice, salt and pepper to a food processor and blend until smooth and creamy.
  2. Slice the celery stalks in half.
  3. Divide the ricotta mixture evenly between the center of the celery stalks.
  4. Finely chop the cranberries and scatter over the tops of the ricotta to serve.
