These tender green beans are cooked in a tomato sauce with salty olives and aromatic oregano, then topped with tangy feta cheese to serve.
These are a great side to Mediterranean dishes.
Ingredients
- 6 medium black olives
- 3 ½ ounce green beans (string beans), raw
- 2 tablespoon feta cheese
- 1 tablespoon olive oil
- 1 clove garlic, fresh
- 1 teaspoon oregano, ground
- ¼ cup tomato sauce
- ¼ cup vegetable broth, bouillon or consomme
Instructions
- Heat the olive oil in a saucepan over a low/medium heat. Thinly slice the garlic and add to the pan, sweating gently until tender.
- Thinly slice the olives and add to the pan with the passata, stock and oregano. Stir to combine and bring to a gentle boil.
- Add the green beans and stir well. Simmer for 5-6 minutes until tender and the sauce has reduced.
- Scatter the beans with crumbled feta to serve.
