These rich and salty olives are baked with diced halloumi to create a simple savory snack or side.

Perfect to accompany a summer salad or grilled meats.

Ingredients

  • 7 ounce haloumi cheese by papouis
  • 1 teaspoon oregano, dried
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon peel or zest raw
  • 1 clove garlic
  • 24 olives pitted kalamata olives by mezzetta
  • ½ tablespoon olive oil
  • ½ tablespoon peppermint, fresh
  • ½ tablespoon parsley, fresh
  • ¼ cup green olives

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Dice the halloumi into 1 inch chunks and add to a mixing bowl along with the olives, olive oil, oregano, lemon juice and zest. Mince the garlic and add to the bowl. Mix everything together well to combine.
  3. Tip the mixture into an oven proof dish and bake for 10 minutes or until hot through and the cheese begins to brown. Scatter with chopped fresh parsley and mint to serve.
