These crusted avocado slices are coated with crumbled pork rinds and Parmesan cheese then baked until crisp and golden.

These make a deliciously fat rich snack, perfect for dipping in your favorite low carb tomato salsa.

Ingredients

  • 2 ¾ ounce fried pork rinds
  • 1 each avocado
  • 1 tablespoon, grated parmesan cheese
  • 1 teaspoon italian seasoning
  • 1 small raw egg

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Add the pork rinds to a food processor and blend to a crumb consistency.
  3. Add the parmesan and Italian seasoning and blend again to combine. The mixture will be crumbly and quite fatty.
  4. Slice the avocado into 8 even slices.
  5. Beat the egg in a small bowl and add the pork crumb to another bowl.
  6. Dredge each slice of avocado in the egg until well coated then roll in the crumb, pressing the mixture around the avocado so that it is well coated. Arrange on a shallow oven tray and bake for 10 minutes until crisp and golden.
