A thick strip of portabella mushroom cap adds so much flavor on its own in this snack – no seasoning needed! Layers of melted swiss cheese and deli-sliced salami add natural salt and fats to the center, tenderizing the mushroom as well. This is a satisfying hot finger-food!

Ingredients

  • 4 medium slice – 3 1/8" diameter x 1/16" – each 0.4 ounce salami
  • 4 slice (from pre-sliced package) – each 3/4 ounce swiss cheese
  • 2 ounce portabella mushrooms, raw

Instructions

  1. Preheat an oven to 375 degrees. On a sheet tray lined with parchment paper, arrange 2 slices of salami per serving. Lay a slice of swiss cheese over each salami slice. Then, arrange a ½-oz strip of portabella mushroom at the base of each cheese slice.
  2. Bake the tray for 4-5 minutes, until you see the cheese melt and the edges of salami start to turn golden.
  3. Let the tray cool for 60-90 seconds before using a spatula to roll each salami slice over the mushroom strip up into a roll.
