These simple yet delicious lettuce cups are loaded with spiced chilli beef and topped with a sprinkling of tangy cheddar cheese.

These are a great lunch served hot, or you could prepare the beef in advance and add cold to lunch box salads.

Ingredients

  • ½ pound ground beef
  • 1 tablespoon olive oil
  • ¼ medium – 2 1/2" diameter x 2 3/4" green bell pepper
  • ½ cup beef broth, bouillon or consomme, homemade
  • 2 teaspoon tomato puree
  • 1 teaspoon chili powder
  • ½ teaspoon gourmet collection smoked paprika by mccormick
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon cumin, ground
  • 1 teaspoon oregano, dried
  • ¼ cup, grated cheddar cheese
  • 4 inner (small) leaf lettuce, romaine or cos
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Heat a tablespoon of olive oil in a large pan over a medium/high heat. Add the beef and cook until browned all over.
  2. Finely dice the pepper and add to the pan with the beef along with all the spices, seasonings and tomato puree. Stir well to combine.
  3. Add the beef stock to the pan and simmer for 15 minutes until all the liquid has been absorbed.
  4. To serve, divide the chili between the four lettuce cups and scatter over the grated cheese.
