This quick and easy keto spaghetti is packed with tender pork, aromatic herbs, sweet onion and zucchini ribbons.
This makes a great quick and easy dinner option for weeknights.
Ingredients
- 9 ounce ground pork
- 1 ½ ounce mozzarella cheese
- 1 tablespoon basil, fresh
- 1 tablespoon olive oil
- 1 medium zucchini
- 1 tablespoon tomato paste
- 1 clove garlic
- 1 teaspoon italian seasoning
- ½ small white onion
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Heat the olive oil in a skillet over a medium heat. Add the pork, cooking until browned all over. Thinly slice the onion and garlic and add to the skillet, cooking for a minute or two more to soften.
- Add the tomato paste, Italian seasoning, salt and pepper. Stir well to combine and cook through for 2-3 minutes more.
- Whilst the meat cooks, peel the zucchini discarding the skin. Peel the flesh into long wide ribbons then add to the skillet and stir well to combine. Cook for a minute until tender.
- Tear in the mozzarella and basil leaves and stir through to melt the cheese. Serve hot.
