This simple yet tasty salad utilises zucchini noodles in the place of pasta.

This is a great light lunch for meal prepping and for using up any leftover cooked chicken.

Ingredients

  • 3 piece sundried tomatoes
  • 2 tablespoon olive oil
  • 1 cup rotisserie chicken
  • 1 tablespoon, whole pieces pine nuts
  • 1 cup zucchini noodles by green giant
  • 1 ½ cup, cut pieces baby spinach
  • ½ cup, whole pieces basil, fresh
  • ⅓ cup feta cheese
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the zucchini noodles to a mixing bowl.
  2. Roughly chop the spinach, basil and tomatoes and add to the mixing bowl along with the noodles. Tear the chicken and crumble the feta into the bowl.
  3. Season and stir well to combine.
  4. Drizzle over the olive oil and scatter with pine nuts to serve.
