This simple yet tasty salad utilises zucchini noodles in the place of pasta.
This is a great light lunch for meal prepping and for using up any leftover cooked chicken.
Ingredients
- 3 piece sundried tomatoes
- 2 tablespoon olive oil
- 1 cup rotisserie chicken
- 1 tablespoon, whole pieces pine nuts
- 1 cup zucchini noodles by green giant
- 1 ½ cup, cut pieces baby spinach
- ½ cup, whole pieces basil, fresh
- ⅓ cup feta cheese
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the zucchini noodles to a mixing bowl.
- Roughly chop the spinach, basil and tomatoes and add to the mixing bowl along with the noodles. Tear the chicken and crumble the feta into the bowl.
- Season and stir well to combine.
- Drizzle over the olive oil and scatter with pine nuts to serve.
