This quick and easy cabbage is pan fried with sweet red onion, smokey Spanish chorizo and tangy apple cider vinegar.

This makes for a great side to accompany roasted chicken, pork or white fish.

Ingredients

  • 2 ounce fresh food spanish chorizo by sainsbury's
  • 1 ½ cup red cabbage
  • 1 tablespoon olive oil
  • ½ tablespoon apple cider vinegar
  • ¼ large red onion
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Thinly slice the cabbage and the onion. Heat the oil in a skillet over a medium heat and add the onion and cabbage, sweating for a minute.
  2. Add the apple cider vinegar, salt and pepper and stir well, cooking for a minute more to soften.
  3. Roughly dice the chorizo and add to the skillet. Stir well and fry for 5-6 minutes until the chorizo is golden brown and cooked through and the cabbage is tender.
