This quick and easy cabbage is pan fried with sweet red onion, smokey Spanish chorizo and tangy apple cider vinegar.
This makes for a great side to accompany roasted chicken, pork or white fish.
Ingredients
- 2 ounce fresh food spanish chorizo by sainsbury's
- 1 ½ cup red cabbage
- 1 tablespoon olive oil
- ½ tablespoon apple cider vinegar
- ¼ large red onion
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Thinly slice the cabbage and the onion. Heat the oil in a skillet over a medium heat and add the onion and cabbage, sweating for a minute.
- Add the apple cider vinegar, salt and pepper and stir well, cooking for a minute more to soften.
- Roughly dice the chorizo and add to the skillet. Stir well and fry for 5-6 minutes until the chorizo is golden brown and cooked through and the cabbage is tender.
