This very simple dish would work well for breakfast, brunch or a quick dinner alternative. Fresh eggs are cracked into buttered ramekins and baked to gooey-yolk perfection. They are topped with crumbled cotija and a drizzle of heavy cream.
Ingredients
- 1 tablespoon butter, salted
- 4 large raw egg
- ¼ teaspoon coarse kosher salt by morton
- ⅛ teaspoon black pepper
- 4 teaspoon queso cotija cheese
- 4 teaspoon heavy cream
Instructions
- Preheat an oven to 350 F. Grease four 4 ounce ramekins with room temperature butter.
- Crack one egg into each ramekin.
- Divide the salt and black pepper between all the ramekins as well as the crumbled cotija cheese. Bake for 10-12 minutes or until the whites of the egg is cooked and the center is gooey. Add additional minutes for desired doneness. In the last minute of cooking, add 1 tsp heavy cream to each ramekin and continue baking until total time has elapsed. Serve hot and dip with keto bread.
