This one pot turkey and cabbage skillet is loaded with flavor from melted cheddar cheese, salty bacon and crisp scallions.

This makes a great sharing dish for everyone to get stuck in – perfect served with an avocado salad.

Ingredients

  • 14 ounce ground turkey
  • 4 slice – 6" long bacon
  • 3 cup cabbage
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 1 tablespoon red onion
  • 1 cup, grated cheddar cheese
  • 1 large scallions
  • 1 teaspoon gourmet collection smoked paprika by mccormick
  • 1 tablespoon cilantro
  • ⅔ cup vegetable broth, bouillon or consomme
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon salt, sea salt

Instructions

  1. Heat the olive oil in a large skillet over a medium/high heat. Roughly dice the bacon and add to the pan until cooked through and golden. Remove with a slotted spoon and set aside.
  2. Add the turkey to the pan with the bacon fat and cook through until just brown.
  3. Finely dice the onion and mince the garlic. Add to the pan and stir well. Cook for a minute or two until just tender and fragrant.
  4. Roughly slice the cabbage and add to the pan. Add the paprika and stock and stir well. Bring to a simmer and cook for 6-8 minutes until the stock has completely reduced down.
  5. Remove the pan from the heat and scatter over the grated cheese to melt. Finely slice the scallions and scatter them over the top of the cheese along with cooked bacon. Sprinkle with fresh cilantro to serve.
