This richly flavored cauliflower rice is cooked with creamy butter and aromatic garlic and tossed with crispy fried onions to serve.
This makes a great side dish to curried meats.
Ingredients
- 2 clove garlic
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- ½ small red onion
- ⅓ cup vegetable broth, bouillon or consomme
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
- 1 ½ cup cauliflower rice
Instructions
- Thickly slice the onion. Heat the olive oil in a skillet over a medium heat and add the onion slices. Fry for 4-5 minutes or until golden and crisp at the edges. Remove from the skillet and set to one side.
- Melt the butter in the skillet. Crush the garlic and add to the pan along with the cauliflower rice and cook for a minute or so.
- Add the stock and simmer for 2-3 minutes or until the liquid has been absorbed and the rice is cooked through.
- Stir through the crispy onions to serve.
