This richly flavored cauliflower rice is cooked with creamy butter and aromatic garlic and tossed with crispy fried onions to serve.

This makes a great side dish to curried meats.

Ingredients

  • 2 clove garlic
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • ½ small red onion
  • ⅓ cup vegetable broth, bouillon or consomme
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper
  • 1 ½ cup cauliflower rice

Instructions

  1. Thickly slice the onion. Heat the olive oil in a skillet over a medium heat and add the onion slices. Fry for 4-5 minutes or until golden and crisp at the edges. Remove from the skillet and set to one side.
  2. Melt the butter in the skillet. Crush the garlic and add to the pan along with the cauliflower rice and cook for a minute or so.
  3. Add the stock and simmer for 2-3 minutes or until the liquid has been absorbed and the rice is cooked through.
  4. Stir through the crispy onions to serve.
