The scallops are highly seasoned and maintain their delicacy inside a crispy wrapping of salty bacon. Break through the centers with a knife and enjoy the tender insides!

Ingredients

  • 6 large – sea scallop scallops
  • â…› teaspoon black pepper
  • â…› teaspoon garlic powder
  • â…› teaspoon onion powder
  • â…› teaspoon paprika
  • â…› teaspoon crushed red pepper by simply organic
  • 3 slice – 6" long bacon
  • 1 ½ teaspoon olive oil

Instructions

  1. Arrange jumbo scallops on a flat surface and pat dry on all sides with a paper towel. Season the tops of the scallops with all seasonings.
  2. Slice raw strips of bacon in half into 2 short strips. Wrap a piece of bacon over each scallop, tucking the ends of the bacon under the scallops.
  3. Heat the olive oil in a pan over medium heat, and place the scallops in with the ends of bacon tucked under the scallops against the pan. Cook the scallops for 3-5 minutes per side – until the bacon is very crispy on each side, flipping over with a pair of tongs.
  4. Transfer the cooked bacon wrapped scallops to a serving plate. You may rest the scallops on a paper towel to soak up excess fat from the bacon at your discretion.
