This simple yet tasty dinner makes for a quick and easy weeknight option.
Chicken breasts are flattened to create a base for pizza style toppings then baked until oozy and golden. Perfect served with a green salad or steamed veggies!
Ingredients
- 6 olives pitted kalamata olives by mezzetta
- 4 piece sundried tomatoes packed in oil drained
- 2 medium – split boneless skinless chicken breast
- 1 ¾ ounce goat cheese, soft
- 1 tablespoon tomato paste
- 1 tablespoon basil, fresh
- ½ teaspoon oregano, dried
- ½ tablespoon olive oil
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Arrange the chicken breasts between two sheets of plastic wrap and flatten with a meat mallet or rolling pin to an even thickness – about 1/2 inch.
- Divide the tomato paste between the two chicken breasts. Spreading evenly across the surface.
- Sprinkle over the dried oregano and crumble over the goats cheese.
- Roughly chop the tomatoes and slice the olives, arrange over the top of the chicken breasts.
- Season with a little salt and pepper and drizzle with the olive oil. Transfer to the oven for 20-22 minutes to bake until the chicken is completely cooked through and the cheese has melted. Scatter with fresh basil to serve.
