This deliciously light and fragrant compound butter is flavored with salty capers, aromatic dill and a hint of zesty lemon.

Ingredients
- 1 tablespoon, whole pieces capers
- 1 tablespoon lemon peel
- 2 tablespoon dill weed, fresh
- ½ cup unsalted butter
Instructions
- Add room temperature butter to a mixing bowl so that it is soft and mixable.
- Finely chop the capers and dill and add to the bowl with the butter, along with the lemon zest. Mash everything together thoroughly to combine.
- Lay out a square of saran wrap. Spoon the butter along the center of the square, then roughly mould it into a sausage shape with your hands.
- Bring the edges of the wrap up around the butter, wrapping it tightly in a sausage shape. Twist the ends of the wrap securely to seal. Transfer to the fridge to firm up for 20 minutes.
