This slow cooked pork stew is rich with spicy piquante peppers, red onion, celery and aromatic spices.

Perfect served over a bed of cauliflower rice or zucchini noodles.

Ingredients

  • 17 ½ ounce pork chops, center loin, fresh, visible fat eaten
  • 12 1 pepper sweet & mild piquante pepper
  • 2 medium – stalk – 7 1/2" to 8" long celery stalks
  • 1 tablespoon tomato paste
  • 1 teaspoon oregano, dried
  • 1 teaspoon paprika
  • 1 small red onion
  • 1 tablespoon olive oil
  • 1 clove garlic
  • ½ cup chicken broth, bouillon or consomme, ready-to-serve can

Instructions

  1. Heat the olive oil in a skillet over a medium/high heat. Season the pork with a little salt and pepper and add to the pan to brown on all sides. Transfer to a crock pot.
  2. Roughly chop the celery and finely slice the onion and garlic. Add to the pan with the pork, peppers, stock, tomato purée, oregano and paprika. Mix together to combine.
  3. Cover and cook on high for four hours or until the pork is completely cooked through.
