These simple cucumber bites are topped with a helping of creamy and spicy scrambled eggs and a touch of fresh parsley.

These are a great idea for snacking, party appetisers or simply added to a lunch time salad!

Ingredients

  • 3 medium raw egg
  • 3 teaspoon curry powder
  • 1 tablespoon heavy cream
  • 1 tablespoon butter
  • 1 tablespoon parsley, fresh
  • ⅓ large – 8 1/4" long cucumber
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the eggs to a bowl along with the curry powder, cream, salt and pepper. Beat well to combine.
  2. Melt the butter in a saucepan over a medium heat. Add the beaten egg and let it settle for a moment before scrambling with a fork. Cook to preference.
  3. Whilst the eggs are cooking, slice the cucumber into 20 even sized discs – about 1/4 inch thick.
  4. Divide the curried egg between the cucumber discs.
  5. Scatter with fresh parsley to serve.
