This simple summer salad is loaded with low carb veggies and fruits and topped with creamy feta cheese and crunchy walnuts.
This makes a great lunch option or even a side salad to BBQ meats.
Ingredients
- 2 medium – 3/4" to 1" diameter radish
- 2 cup spinach
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- 1 each avocado
- 1 tablespoon basil, fresh
- ¼ cup feta cheese
- ¼ cup walnuts
- ¼ small red onion
- ¼ cup strawberries
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the walnuts to a dry skillet over a low/medium heat. Toast gently for a minute or two until lightly browned.
- Add the spinach to a large serving bowl. Thinly slice the radishes, strawberries, onion and avocado. Add to the bowl with the spinach.
- Crumble the feta cheese over the salad and season all with a little salt and pepper. Toss to combine.
- Scatter the toasted walnuts over the salad.
- Whisk together the oil and vinegar and drizzle over the salad. Scatter with fresh basil to serve.
