This simple tomato and cucumber salad is tossed with aromatic fresh basil, toasted pine nuts, zesty lemon juice and olive oil.

This makes a light and refreshing side salad served with grilled meats, fish or vegetarian main.

Ingredients

  • 2 tablespoon, whole pieces pine nuts
  • 1 medium – 2 3/5" diameter tomato
  • 1 tablespoon olive oil
  • ⅓ large – 8 1/4" long cucumber
  • ½ tablespoon lemon juice, fresh
  • ¼ cup, whole pieces basil, fresh
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper, ground

Instructions

  1. Add the pine nuts to a dry skillet over a low/medium heat. Toast gently for 3-4 minutes until lightly golden.
  2. Finely dice the cucumber and tomato and add to a serving bowl. Toss to combine.
  3. Roughly chop the basil and add to the salad. Season to taste and toss to combine.
  4. Scatter the pine nuts over salad.
  5. Whisk together the lemon juice and olive oil and drizzle over the salad to serve.
