This simple tomato and cucumber salad is tossed with aromatic fresh basil, toasted pine nuts, zesty lemon juice and olive oil.
This makes a light and refreshing side salad served with grilled meats, fish or vegetarian main.
Ingredients
- 2 tablespoon, whole pieces pine nuts
- 1 medium – 2 3/5" diameter tomato
- 1 tablespoon olive oil
- ⅓ large – 8 1/4" long cucumber
- ½ tablespoon lemon juice, fresh
- ¼ cup, whole pieces basil, fresh
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper, ground
Instructions
- Add the pine nuts to a dry skillet over a low/medium heat. Toast gently for 3-4 minutes until lightly golden.
- Finely dice the cucumber and tomato and add to a serving bowl. Toss to combine.
- Roughly chop the basil and add to the salad. Season to taste and toss to combine.
- Scatter the pine nuts over salad.
- Whisk together the lemon juice and olive oil and drizzle over the salad to serve.
