This tasty Keto salad is layered with both sweet and savory flavors. Our low carb recipe is prepared with peppery arugula, juicy strawberries, fresh peppermint leaves, tangy balsamic vinegar, olive oil, tender red onion, and salty feta cheese. This light and refreshing Keto recipe makes a great summer side, perfect for the BBQ table.

Are Strawberries Keto?

Berries are the best option if you wish to include some fruit in your Keto diet. Although they still contain some carbs, they can be enjoyed in moderation as part of a balanced low carb diet. The best berries for a Keto diet include strawberries, raspberries, blueberries, and blackberries. We have used just 5 medium strawberries for this salad. This is enough to provide a sweet flavor without being heavy on the carb count. You can, of course, use less if you prefer or even swap the strawberries for raspberries. Please be sure to adjust your macros to account for any changes made to the recipe.

Can I Use A Different Cheese?

We have used tangy feta cheese for this low carb salad recipe. Feta cheese perfectly complements the sweetness of the balsamic and strawberries, as well as providing the dish with extra fats and a source of protein. You can swap the feta for some crumbled goat cheese or diced pan-fried halloumi if preferred.

Ingredients

  • 5 medium – 1 1/4" diameter strawberries
  • 3 oz feta cheese
  • 2 cup arugula
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon peppermint, fresh
  • ¼ medium – 2 1/2" diameter red onion
  • ⅛ teaspoon black pepper

Instructions

  1. Clean the strawberries and remove the stalks. Quarter the strawberries and add to a salad/serving bowl along with the arugula. Thinly slice the onion and add to the bowl. Crumble the feta cheese into the bowl. Mix well to combine.
  2. Add the balsamic vinegar and oil to a small bowl. Season with black pepper. Whisk the dressing together until well combined.
  3. Roughly chop the fresh mint. Scatter the mint over the salad. Drizzle the dressing over the salad. Lightly toss to combine.
