This simple salad is packed with tender roasted radishes, sweet red onion and baby leaf spinach, topped with a sweet dressing of oil, vinegar and crispy bacon!

This is a great option for a light lunch or served as a side salad.

Ingredients

  • 7 ounce radish
  • 2 ½ tablespoon olive oil
  • 2 cup baby spinach
  • 2 slice – 6" long bacon
  • 2 teaspoon maple flavored syrup by lakanto
  • 1 tablespoon balsamic vinegar
  • ¼ teaspoon salt, sea salt
  • ¼ small red onion
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Slice the tips from the radishes, discard and cut the radishes in half. Arrange across a shallow baking tray and season with salt and pepper. Drizzle with a tablespoon of olive oil and toss to combine. Transfer to the oven to bake for 20 minutes until golden and tender.
  3. Whilst the radishes are cooking, heat half a tablespoon of olive oil in a skillet and add the bacon. Cook through until really crisp then set aside to cool.
  4. Thinly slice the onion and add to a large serving bowl along with the spinach and roasted radishes. Season to taste and toss to combine.
  5. Crumble the cooked bacon into a small mixing bowl with the remaining olive oil, balsamic and lakanto. Stir to combine.
  6. Drizzle the bacon dressing over the salad to serve.
