This keto Salsa is fresh and tangy with a little spice. Low carb veggies are mixed with healthy fats from avocado and olive oil to create a refreshing side to a main meal.

Perfect served with grilled meats or to top baked fish.

Ingredients

  • 4 small – approx 2" long dill pickles
  • 1 tablespoon coriander leaf, fresh
  • 1 tablespoon parsley, fresh
  • 1 small – 2 2/5" diameter tomato
  • 1 tablespoon olive oil
  • ½ tablespoon lime juice, fresh
  • 1 1/4cup cucumber seedless english
  • ¼ pepper raw hot red chili peppers
  • ¼ cup avocado

Instructions

  1. Finely dice the tomato, cucumber, avocado and chili and finely slice the dill pickles. Add to a mixing bowl with the fresh herbs, lime juice, olive oil and stir well to combine.
  2. Refrigerate until ready to serve.
