This low carb slaw is packed with raw Brussels sprouts, crunchy red and white cabbage and coated in a zesty tahini and sesame dressing.

This is a great side dish to lamb, chicken or pork.

Ingredients

  • 5 sprout brussels sprouts, raw
  • 2 medium – 4 1/8" long scallions
  • 2 teaspoon, whole pieces sesame seeds, hulled, toasted, unsalted
  • 1 teaspoon sesame oil
  • 1 tablespoon olive oil
  • 1 teaspoon tahini
  • 1 clove garlic
  • ½ cup red cabbage
  • ½ cup cabbage, green, raw
  • ½ tablespoon lemon juice, fresh

Instructions

  1. Slice the bases off the Brussels sprouts, remove the outer leaves and discard. Very thinly slice the sprouts and cabbage and add to a large bowl.
  2. Slice the scallions and add to the bowl, tossing everything together to combine.
  3. Crush the garlic and add to a mixing bowl along with the olive oil, sesame oil, tahini and lemon juice. Mix well to combine.
  4. Drizzle the dressing over the slaw and massage into the vegetables.
  5. Scatter over the sesame seeds and loosely stir through to combine.
