This is an excellent side that serves two purposes: 1. It can be whipped up in minutes to join your main entree. 2. You can add a healthy percentage of fat to your meal in an easy, low-carb recipe. The zoodles are a little crunchy, but the coating of parmesan and oily garlic makes this side dish truly addicting.
Ingredients
- 4 ounce zucchini
- ½ tablespoon olive oil
- ¼ teaspoon lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon, chopped garlic
- 2 tablespoon, grated parmesan cheese
Instructions
- Use a spiralizer to cut the zucchini into noodles. You may want to use thinner zucchini noodles, instead of thick noodles, for a more enjoyable texture. Combine all the ingredients in a bowl.Toss gently before serving.
