This simple keto salad is rich with tangy feta cheese, tender baby spinach, tart cranberries and crunchy pine nuts, drizzled with a sweet balsamic dressing.

This makes for a great side salad with roasted chicken or lamb.

Ingredients

  • 3 tablespoon feta cheese
  • 2 cup baby spinach
  • 1 tablespoon, whole pieces pine nuts
  • 1 tablespoon reduced sugar craisin dried cranberries by ocean spray
  • 1 tablespoon olive oil
  • ½ tablespoon balsamic vinegar
  • ¼ cup, whole pieces basil, fresh
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the pine nuts to a dry skillet over a low/medium heat. Toast gently for two to three minutes until lightly golden.
  2. Add the spinach and basil to a large serving bowl. Finely chop the cranberries and add to the bowl. Crumble over the feta and pine nuts. Season with salt and pepper and toss to combine.
  3. Whisk together the balsamic and olive oil and drizzle over the salad. Stand for 10 minutes to allow the spinach to soften in the dressing a little before serving.
