This flavorsome keto dip is loaded with cream cheese, salty olives, sweet roasted red pepper, aromatic basil and tender shallot.
This is a great dip for keto crackers or low carb vegetables.
Ingredients
- 6 medium green olives
- 2 tablespoon cream cheese spread
- 1 tablespoon basil, fresh
- 1 teaspoon lemon juice
- 1 tablespoon, chopped shallot
- ½ medium – 2 1/2" diameter x 2 3/4" red bell peppers, sweet, raw or blanched, marinated in oil mixture
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Finely dice the shallot and add to a food processor along with the remaining ingredients.
- Blend to a coarse consistency. Taste and adjust seasonings if required and keep refrigerated until ready to serve.
