How to Make Keto Southern Style Greens

Southern collard greens are typically slow cooked with ham until wilted and tender. For a quick and easy alternative, we have simmered our Keto collard greens with bacon, onion and garlic in chicken stock. Not forgetting a generous tablespoon of butter for those all important Keto fats.

Serving Suggestions

These Keto soul food greens are a great accompaniment to a southern inspired meal. Perfect with Keto chicken or pork recipes and a side of low carb biscuits. Alternatively this is simply a great side to accompany weeknight dinners.

Ingredients

  • 5 cup collard greens
  • 4 slice – 6" long bacon
  • 1 clove garlic
  • 1 cup chicken broth, bouillon or consomme, ready-to-serve can
  • 1 tablespoon unsalted butter
  • ½ small white onion

Instructions

  1. Melt the unsalted butter in a large skillet over a medium heat. Thinly slice the onion and roughly dice the bacon. Add the onion and the bacon to the skillet with the melted butter. Pan fry for a few minutes to brown the bacon all over and soften the onion.
  2. Thinly slice the garlic. Add the garlic to the skillet along with the onion and bacon. Stir well to combine. Cook for a few minutes more until the garlic is soft and fragrant and the bacon is golden and starting to crisp.
  3. Slice the collard greens into half inch ribbons, discarding any tough stalks. Add the collard ribbons to the skillet. Add the chicken stock and stir well to combine. You may wish to season with salt and pepper at this point, depending on the strength of your stock seasoning. Bring to a gentle boil, then reduce to a simmer until the greens are tender and all the stock has evaporated – about 15/20 minutes. Serve hot.
