This indulgent winter slaw is rich with heavy cream, mayo, a hint of sweet cranberry and crunchy walnuts.
This is a great accompaniment to roasted pork or chicken and served alongside a simple salad.
Ingredients
- 1 cup, chopped red cabbage
- 1 tablespoon mayonnaise
- 1 tablespoon heavy cream
- 1 teaspoon apple cider vinegar
- ½ cup, sliced fennel bulb, raw
- ¼ cup, chopped walnuts
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
- ½ tablespoon reduced sugar craisin dried cranberries by ocean spray
Instructions
- Finely slice the cabbage and fennel and add to a mixing bowl. Finely chop the cranberries and walnuts and add to the chopped vegetables, tossing to combine.
- Add the cream and mayo to another bowl along with the vinegar, salt and pepper. Stir well to combine.
- Stir the dressing into the vegetable mixture, coating everything well in creamy mayo. Refrigerate until ready to serve.
