This indulgent winter slaw is rich with heavy cream, mayo, a hint of sweet cranberry and crunchy walnuts.

This is a great accompaniment to roasted pork or chicken and served alongside a simple salad.

Ingredients

  • 1 cup, chopped red cabbage
  • 1 tablespoon mayonnaise
  • 1 tablespoon heavy cream
  • 1 teaspoon apple cider vinegar
  • ½ cup, sliced fennel bulb, raw
  • ¼ cup, chopped walnuts
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper
  • ½ tablespoon reduced sugar craisin dried cranberries by ocean spray

Instructions

  1. Finely slice the cabbage and fennel and add to a mixing bowl. Finely chop the cranberries and walnuts and add to the chopped vegetables, tossing to combine.
  2. Add the cream and mayo to another bowl along with the vinegar, salt and pepper. Stir well to combine.
  3. Stir the dressing into the vegetable mixture, coating everything well in creamy mayo. Refrigerate until ready to serve.
