This rich spinach bake is combined with oozy mozzarella, tangy cheddar, heavy cream, salty Parmesan and baked until bubbling and golden.

This makes a great side to roasted meats, perfect to accompany Sunday lunch.

Ingredients

  • 8 cup baby spinach
  • 2 tablespoon, grated parmesan cheese
  • 1 tablespoon unsalted butter
  • 1 teaspoon salt, sea salt
  • 1 cup heavy cream
  • ½ cup, grated cheddar cheese
  • ½ cup, grated mozzarella cheese
  • â…› teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Set the spinach in a colander and pour over boiling water to just wilt the spinach. Drain and set aside. Once cool enough to handle squeeze out any excess liquid.
  3. Melt the butter in a saucepan and add the cream, mozzarella, cheddar, salt and pepper. Gently heat through, stirring to melt the cheeses until you have a thick sauce. Remove from the heat.
  4. Add the spinach to the pan and stir well to combine.
  5. Spoon the creamy spinach mixture into a small oven dish in an even layer. Sprinkle over the grated parmesan.
  6. Transfer to the oven to bake for 18-20 minutes or until golden and bubbling. Serve hot.
