This delicious keto salad is packed with flavor and texture from hard boiled eggs, crisp salad vegetables and tangy blue cheese.

This makes a great light lunch option or side salad.

Ingredients

  • 2 large – 1" to 1 1/4" diameter radish, raw
  • 2 medium hard boiled egg
  • 2 cup baby spinach
  • 1 large – stalk – 11" to 12" long celery
  • 1 tablespoon red onion
  • 1 tablespoon blue cheese
  • 1 tablespoon olive oil
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Roughly dice the celery and thinly slice the radishes. Add to a large serving bowl along with the spinach and red onion. Toss to combine.
  2. Quarter the eggs and add to the bowl. Season the salad with salt and pepper and drizzle over the olive oil, toss gently to combine.
  3. Crumble the cheese into the salad to serve.
