These crispy chicken tenders are coated in a soy and lemon mayo then rolled in a sesame, chia and ground almond crumb before being baked until golden.
These make a great dinner or lunch served with cauliflower rice or stir fried vegetables.
Ingredients
- 8 tender chicken tender, raw
- 2 tablespoon, ground almonds, raw
- 2 tablespoon, whole pieces chia seeds
- 2 tablespoon, whole pieces sesame seeds
- 2 tablespoon mayonnaise
- 1 teaspoon sesame oil
- 1 teaspoon lemon juice
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit and lightly oil a shallow baking tray.
- Add the mayonnaise, sesame oil and lemon juice to a small bowl. Mix together well to combine.
- Add the ground almonds, sesame seeds, chia seeds, salt and pepper to a plate and mix together to combine.
- Arrange the chicken strips across a clean work surface.
- Coat each chicken piece in a generous layer of the sesame mayonnaise.
- Roll each coated chicken piece in the crumb mixture until evenly coated.
- Arrange the chicken pieces across the prepared oven tray. Bake for 18-20 minutes or until completely cooked through and golden brown.
