These keto prawn cocktail bites utilizes jumbo shrimp in a Cajun inspired spiced mayonnaise.

Ingredients
- 12 shrimp jumbo shrimp by publix
- 4 leaf, inner romaine lettuce
- 2 teaspoon lemon juice raw
- 1 tablespoon parsley
- 1 teaspoon gourmet collection smoked paprika by mccormick
- ½ teaspoon tomato puree
- ½ teaspoon garlic powder
- ½ teaspoon spices onion powder
- ½ cup mayonnaise
- ¼ teaspoon cayenne pepper
- ¼ tsp, leaves spices thyme dried
- 0.2 teaspoon salt
- â…› teaspoon black pepper
Instructions
- Arrange the lettuce leaves and top each leaf with three jumbo shrimp.
- Add the mayonnaise, lemon juice, tomato puree, paprika, garlic powder, onion powder, cayenne pepper, thyme, salt and pepper to a mixing bowl. Stir well to combine.
- Top each of the shrimp filled leaves with 2-3 heaped teaspoons of the mayonnaise.
- Sprinkle with a little paprika and scatter with fresh chopped parsley to serve.
