This vibrant salsa is simple yet tasty and makes a great accompaniment to meat dishes.
The recipe itself is to give four small portions as a side or relish to accompany your meal however this would also serve to feed two as the base of a salad.
Ingredients
- 2 medium – 4 1/8" long scallions
- 1 tablespoon, chopped cilantro
- 1 tablespoon peppermint, fresh
- 1 tablespoon extra virgin olive oil
- ½ each – approx 4" – 6" long hot chili peppers, green, raw
- ½ each – 2" diameter lime
- ¼ large – 8 1/4" long cucumber
- ¼ teaspoon salt
- ⅛ teaspoon black pepper, ground
Instructions
- Finely dice the cucumber and scallions and add to a small mixing bowl. Slice and de-seed the chilli and finely chop, add to the bowl also. Toss to combine.
- Roughly chop the cilantro and mint leaves and add to the bowl. Season with a little salt and pepper and mix well.
- Add the olive oil, lime juice and the zest of half the lime. Give everything a good stir and leave for 10 minutes to infuse the flavors before serving.
