This keto trapanese is a great alternative to pesto and uses sundried tomatoes for extra sweetness.
Perfect served with grilled fish or meat or added to salads.
Ingredients
- 5 piece sundried tomatoes packed in oil drained
- 3 tablespoon olive oil
- 2 teaspoon lemon juice
- 1 tablespoon, whole pieces almonds, blanched
- 1 clove garlic
- 1 tablespoon, grated parmesan cheese
- ⅓ cup, whole pieces basil, fresh
- ¼ teaspoon salt, sea salt
Instructions
- Add the almonds to a dry pan over a low heat. Toast gently for 2-3 minutes until lightly golden.
- Add the almonds to a food processor along with the garlic, Parmesan, basil, lemon juice, sundried tomatoes and salt. Pulse to combine.
- Add the olive oil and blend to form a chunky pesto. Refrigerate until ready to serve.
