Ingredients
- 2 ½ tablespoon, grated parmesan cheese
- 1 large zucchini
- 1 tablespoon unsalted butter
- ½ tablespoon olive oil
- ½ teaspoon black pepper
Instructions
- Melt the butter in a small pan over a low heat. Add the black pepper and stir well to combine.
- Peel the zucchini into long strips using a vegetable peeler and add to the pan with the melted butter along with the olive oil. Toss to combine, coating the zucchini in the fats and pepper.
- Add the Parmesan and stir well until the zucchini is just tender and the cheese has melted. Serve immediately.
