Ingredients

  • 1 pound zucchini
  • 2 large egg
  • 1 cup parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon spices garlic powder
  • 1 tsp, ground spices oregano dried
  • 5 1/4 cup almond flour

Instructions

  1. Preheat the oven to 425 degrees. Line a large baking sheet with parchment paper, and spray it well with pan spray.
  2. Peel the zucchini, and slice it into fries that are about ½-inch X 3 inch. The yield should be about 1 lb, so keep this in mind when selecting your zucchinis for this recipe. They will lose a LOT of water weight in the oven!
  3. In one bowl, whisk together two eggs and set it aside. In a second bowl, combine the remaining ingredients.
  4. To coat the zucchini fries, dip them one by one in the egg mixture, let the excess egg drip off, and then roll them in the dry mixture. Then, gently set them on the lined baking sheet.
  5. Bake the zucchini fries in the oven for about 30 minutes, flipping them over halfway through with a spatula. For golden brown edges, you can cook them under the broiler for a minute or two. Keep an eye on them to avoid burning.
  6. Serve hot with the optional garnish of lemon zest and/or chopped parsley!
