If you cannot source any ready prepared rice, then it is very simple to make yourself. Simply use a box grater to shred/grate cauliflower florets into rice-sized pieces. Ingredients

  • 2 cup cauliflower rice
  • 1 cup baby spinach
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon butter, unsalted
  • 1 clove garlic
  • 1 tablespoon, sliced almonds, raw
  • ½ small red onion
  • ½ tablespoon curry powder
  • ½ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Finely dice the onion and thinly slice the garlic. Heat the olive oil in a medium saucepan over a low heat. Add the onion and garlic. Sweat gently for a few minutes until tender and fragrant.
  2. Add the cauliflower rice to the saucepan. Add the butter, salt, pepper and curry powder. Stir well to combine. Heat through for a couple of minutes, melting the butter and cooking the cauliflower grains.
  3. Add the baby spinach leaves to the saucepan. Cook through briefly until just wilted. Stir in the flaked almonds and serve hot.
