This side salad is bright, zesty, and crisp! It can accompany a salmon dish or chicken dish perfectly, but it’s great for cutting any rich flavors in your meal. An olive oil based lemon-vinaigrette keeps your fat macros in check.
Ingredients
- 1 ounce romaine lettuce
- 1 ounce arugula
- 4 gram basil
- 3 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon white wine vinegar by alessi
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
- ½ teaspoon lemon peel or zest raw
- ¼ ounce parmesan cheese
Instructions
- In a mixing bowl, combine chopped romaine lettuce with arugula and a little under ¼ oz of chopped basil leaves.
- In a small mixing bowl, whisk together the olive oil, lemon juice, vinegar, salt, and pepper.
- Toss the salad with the lemon vinaigrette before serving. Garnish the full salad with lemon zest and shaved or grated parmesan. Enjoy!
