Classic Seven Layer Salad is very close to being a great Keto recipe, but with a few minor adjustments, Keto-dieters can happily enjoy the salad as well! The wonderful thing about this salad is you can see all the beautiful layers of ingredients. The recipe uses a clear bowl to layer lettuce, diced red onions, sliced celery, peas, mayo, sharp cheddar cheese, and crumbled bacon. Guests can serve themselves family-style to this very comforting dish that is sure to please a crowd!

Can I add meat or eggs?

Yes! Feel free to add diced chicken breast or chopped hard-boiled eggs as a layer.

Can I add extra veggies?

Yes! You will need to calculate the macros separately, but you can add vegetables like sliced mushrooms, diced green or red peppers, broccoli, and other Low Carb vegetables.

Can I add different cheese?

Definitely! Feel free to switch it up. Like the heat? Add shredded Pepper Jack cheese! Like Mexican-style? Add Chihuahua or a Mexican blend.

Ingredients

  • 2 cup spring mix
  • 6 tbsp, chopped red onion
  • 4 large – stalk – 11" to 12" long celery
  • 4 oz frozen peas
  • 4 ½ oz mayo
  • ½ tablespoon monk fruit erythritol blend
  • 4 oz cheddar cheese
  • 2 ½ oz bacon

Instructions

  1. Using a clear bowl (if possible), add the lettuce to the bottom.
  2. Next, add the diced red onions.
  3. Then add the sliced celery stalks. If the stalks are relatively wide, slice them in half lengthwise before cutting them so the pieces are smaller.
  4. Then add peas evenly on top. You can allow the peas to thaw at room temperature before using; if not, quickly microwave them in increments of 30 seconds until cold but not frozen.
  5. Then add the mayo. You can use store-bought mayo, but feel free to use homemade mayo using a Keto-friendly oil. Top the mayo with sweetener evenly.
  6. Then add on the sharp cheddar cheese and crumbled bacon. Wrap and chill until ready to serve.
