Traditional grits may be out of the question for keto dieters, but cauliflower does some amazing things! The original Carb Manager Cauliflower Grits has been amped up a notch with flax seeds in this recipe. Flax seeds are a fabulous source of non-animal protein. Plus, flax seeds help the integrity of the grits and adds a chewy texture.

Ingredients

  • 8 ounce cauliflower, raw
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 2 tablespoon butter
  • 2 tablespoon, whole pieces flax seeds

Instructions

  1. Bring a pot of water to a boil, and boil the cauliflower for approx. 10 minutes or until the cauliflower becomes tender. Drain the water when done.
  2. Transfer the cooker cauliflower to a food processor. Add in all the remaining ingredients, and pulse until you get a smooth texture with bits of flax seed throughout and a strong butter smell.
  3. Let the food processor stand, with the top on, for about 10 minutes so the flax seed has time to absorb some moisture. Serve the hot ‘grits’ with additional butter, chopped parsley, or chopped green onion.
