This simple yet tasty side is packed with low carb veggies. Crunchy cabbage, fragrant fennel and tender spinach are simply sautéed in butter with a hint of garlic for a quick and easy side.
This is a great side option for grilled chicken or pork chops.
Ingredients
- 2 cup, cut pieces spinach
- 1 clove garlic
- 1 tablespoon unsalted butter
- 1 cup, chopped red cabbage
- ½ cup, sliced fennel bulb, raw
- ¼ small red onion
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper, ground
Instructions
- Finely slice the onion, fennel and cabbage and mince the onion. Melt the butter in a large frying pan or wok over a medium heat and add the sliced vegetables.
- Fry the vegetables for a few minutes until tender then add the spinach, salt and pepper.
- Remove the pan from the heat and stir through the spinach until just wilted. Serve immediately.
