These low carb fries combine thinly sliced fennel with tangy grated parmesan and a hint of garlic, before being drizzled in olive oil and oven baked until tender and golden.

These make for a quick and easy side dish, or even a snack in between meals.

Perfect served with pork or chicken and a hearty side salad.

Ingredients

  • 3 cup fennel bulb, raw
  • 2 tablespoon, grated parmesan cheese
  • 1 tablespoon olive oil
  • ½ teaspoon garlic, powder
  • ¼ teaspoon salt, sea salt
  • â…› teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Slice a very thin layer from the base of the fennel bulbs so that the cores remain intact. Cut away the fennel stalks and any fronds. The fronds may be reserved for a side salad. Slice the fennel bulbs lengthwise into 1/2 inch strips and arrange across a shallow oven tray.
  3. Scatter over the parmesan, garlic powder, salt and pepper. Drizzle over the olive oil then gently toss the fennel in the seasonings and oil to ensure the fries are evenly coated.
  4. Transfer to the oven to bake for 18-20 minutes turning halfway through. The fries should be tender and golden and starting to caramelize at the edges. Serve hot.
