This flavorsome zucchini is seasoned with fresh garlic and tangy parmesan cheese, then wrapped in bacon before being baked until golden.
This makes a great lunch served with salad or starter to a main meal.
Ingredients
- 4 slice – 6" long bacon
- 1 clove garlic
- 1 tablespoon, grated parmesan cheese
- 1 small zucchini
- ½ tablespoon olive oil
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Slice the zucchini in half lengthwise and carefully score a criss-cross pattern into the flesh of each zucchini half.
- Crush the garlic and sprinkle over the zucchini halves along with the parmesan, salt and pepper. Use your hands to rub the garlic and seasonings into the scored zucchini flesh.
- Wrap two strips of bacon tightly around each zucchini half.
- Arrange the zucchini on a shallow oven tray and drizzle with the oil. Transfer to the oven for 20-25 minutes to bake or until the zucchini is tender and the bacon is golden and cooked through.
