These simple broccoli steaks are par boiled until just tender then baked with pizza inspired toppings of crispy prosciutto, tangy goats cheese and sweet red onion.
These make a flavorful lunch option served with a simple green salad.
Ingredients
- 2 tablespoon tomato sauce
- 1 slice prosciutto
- 1 ounce goat cheese, soft
- ½ teaspoon oregano, dried
- ½ tablespoon, whole pieces pine nuts, pignolias
- ½ tablespoon olive oil
- ⅓ medium – stalk – 7 1/2" to 8" long broccoli, cooked from fresh
- ¼ small onion, white, yellow or red, raw
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper, ground
Instructions
- Slice the broccoli into 2 ‘steaks’, each about a half inch thick. Add the broccoli to a pan of boiling water and simmer for 4-5 minutes until just tender. Remove from the pan and pat dry.
- Preheat the oven to 400 degrees Fahrenheit.
- Divide the passata sauce evenly between the two broccoli steaks and season with salt and pepper to taste.
- Crumble over the goats cheese and scatter with the dried oregano.
- Roughly tear the prosciutto and arrange over the top.
- Thinly slice the onion and scatter over the top of the prosciutto. Drizzle with the olive oil.
- Transfer the pizza topped broccoli to the oven for 8-10 minutes until the cheese is melted and the prosciutto is crisp and hot through. Scatter with pine nuts to serve.
