Chicken salad is a refreshing but filling dish that is normally served as a side. In this recipe, chicken salad-inspired patties are hot, juicy, and perfectly grilled. Enjoy them on a sandwich with keto bread, broken up over a salad, or as is with a dipping condiment.

Ingredients

  • 1 pound ground chicken meat
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • ½ teaspoon, cut pieces chives
  • ⅛ teaspoon garlic powder
  • ½ teaspoon, chopped parsley
  • ½ teaspoon celery seed
  • 1 teaspoon lemon juice
  • 1 tablespoon mayo
  • ¼ cup, chopped pecans, raw
  • 1 tablespoon avocado oil

Instructions

  1. In a bowl, mix together all ingredients except for the avocado oil. Portion the mixture into 4 balls.
  2. Heat the avocado oil in a pan over medium-high heat (or half the oil if you’re cooking only 2 patties at a time). Place the chicken salad portions down in the pan and use a spatula to flatten the portions into patties.
  3. Cook the patties for approx. 4-5 minutes per side. Repeat steps 2-3 if necessary to complete cooking all chicken patties.
