Chicken salad is a refreshing but filling dish that is normally served as a side. In this recipe, chicken salad-inspired patties are hot, juicy, and perfectly grilled. Enjoy them on a sandwich with keto bread, broken up over a salad, or as is with a dipping condiment.
Ingredients
- 1 pound ground chicken meat
- ¼ teaspoon salt
- ¼ teaspoon black pepper, ground
- ½ teaspoon, cut pieces chives
- ⅛ teaspoon garlic powder
- ½ teaspoon, chopped parsley
- ½ teaspoon celery seed
- 1 teaspoon lemon juice
- 1 tablespoon mayo
- ¼ cup, chopped pecans, raw
- 1 tablespoon avocado oil
Instructions
- In a bowl, mix together all ingredients except for the avocado oil. Portion the mixture into 4 balls.
- Heat the avocado oil in a pan over medium-high heat (or half the oil if you’re cooking only 2 patties at a time). Place the chicken salad portions down in the pan and use a spatula to flatten the portions into patties.
- Cook the patties for approx. 4-5 minutes per side. Repeat steps 2-3 if necessary to complete cooking all chicken patties.
