These keto devilled eggs are loaded with a rich filling of soft cream cheese, salty bacon, and aromatic fresh chives.
These make a versatile keto option, perfect for breakfast, lunch or even snacking.
Ingredients
- 4 medium boiled eggs
- 2 slice – 6" long bacon
- 1 tablespoon cream cheese spread
- 1 teaspoon, cut pieces chives, raw
- ½ tablespoon olive oil
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Peel the eggs and slice in half lengthwise. Carefully scoop out the cooked yolk from each egg half and add to a mixing bowl.
- Heat the olive oil in a skillet over a medium heat. Dice the bacon and add to the skillet, cooking through until golden. Set aside to cool completely then add to the bowl with the yolks.
- Finely chop the chives and add to the bowl along with the cream cheese, salt and pepper. Mash everything together until well combined.
- Divide the mixture evenly between the hollowed egg whites to serve.
