Ingredients
- 6 slice – 6" long bacon
- 2 cup, cut pieces brussels sprouts, raw
- 2 tablespoon olive oil
- 1 tablespoon, grated parmesan cheese
- ½ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.
- Trim and thinly slice the sprouts and add to a mixing bowl.
- Add the Parmesan, salt, pepper and 1 tablespoon of olive oil and toss to combine, coating the sprouts in the seasonings.
- Transfer to the oven for 15-18 minutes to bake, turning halfway through, until golden and crisp.
- Whilst the sprouts are baking, add the bacon to a pan with the remaining olive oil and fry until completely crispy – so it looks over cooked.
- Add the bacon to a food processor and blitz to form a crumb.
- Remove the sprouts from the oven and sprinkle over the bacon crumb, toss well to combine and serve immediately.
