These yummy fat bombs combine chocolate and almonds, and then are drizzled with super dark chocolate. This recipe is written without sweetener since there is a small amount in the dark chocolate, but you can add stevia drops to taste or a little erythritol. Since these fat bombs are no bake and egg free, feel free to taste along the way and add sweetener accordingly.

Ingredients

  • 40 gram 90% cocoa supreme dark chocolate by lindt excellence
  • 3 ounce cream cheese
  • 3 tablespoon coconut oil
  • 2 tablespoon almond butter
  • 1 tablespoon, chopped almonds

Instructions

  1. Set up a double boiler to melt the chocolate: Heat a pot with 1-2 inches of water in it over medium heat. Place the squares of chocolate in a metal bowl that will fit over the pot and ideally fit slightly inside of it.
  2. Once the water in the pot starts boiling, reduce the heat so the water is just simmering and place the bowl over the pot. Stir frequently until the chocolate just melts, then set the chocolate aside.
  3. In a bowl, mix together the cream cheese and almond butter. Mix half of the melted chocolate in another small bowl with the coconut oil until smooth, then pour into the cream cheese mixture and mix until smooth.
  4. Chop the almonds and add them to the bowl. Add stevia drops or erythritol if you would like additional sweetness. Refrigerate mixture for about 30 minutes.
  5. Form the mixture into 8 balls and refrigerate for 30 minutes.
  6. Drizzle the remaining chocolate on top of the balls and refrigerate for another hour before eating.
